*This is not a Promoted Post, nor we are trying to change the traditional Panamanian recipes of raspao. It's simply a homemade version that doesn't require any special equipment.
Traditionally, the panamanian raspao is shaved iced made from a huge block with a special scraper, served in a cone and topped with syrup, condensed milk, among other things. You'll find raspaderos (people who make raspaos for a living) and their colorful carts in the afternoon at Cinta Costera, Casco Viejo, Causeway and Parque Omar.
Here's a way of making a raspao with no need for special equipment. It's perfect for entertaining guests at a lunch/dinner party : )
Panamanian Recipes: "Raspao" with Seco
Makes 6-7 Raspaos
3 1/4 cups of chopped Pineapple
1 1/4 cups of water
Zest of 1 lime
1/2 cup of lime juice
1/3 cup of Seco Herrerano(if you can't find Seco, replace with Vodka).
Little mint or basil leaves to decorate
6-7 traditional raspao cones or Martini Glasses
Place all ingredients into a blender until smooth.
Pass the mixture through a strainer to remove the pulp and pour it in a freezer safe pan and freeze (a loaf pan works good).
Check every 1.5-2 hours and start scraping the liquid to the center, making sure it doesn't stick to the pan. Keep checking every 1.5-2 hours until the shaved iced forms. Freezing time may vary depending on your freezer temperature(you can always bring it down to freeze it faster, and then bring it up to regular. Don't worry, it won't melt). It's usually done in 4-6 hours.
It's very convenient if you make it the night before and serve it as dessert in your lunch or dinner party next day. Have more panamanian recipes in your kitchen!
